The basic aioli recipe includes garlic, olive oil and eggs. However, there are several variations to it and the sauce is made to match different foods, it is served with.
Basic aioli recipe
Olive oil and eggs are the ingredients true to all aioli recipes; they are used to form an emulsion base and a rich texture. Instead of making your own base, you can also use plain mayonnaise. Other ingredients include: fresh garlic, lemon juice, salt and pepper.
To make 1.5 cups of aioli sauce you will need;
- Six garlic cloves
- Two egg yolks
- 1.75 cups of extra virgin olive oil
- a tablespoon of fresh lemon juice
- salt to taste
- pepper as you like
Mince the garlic cloves in a blender and then add eggs to it. Blend it to form a uniform mixture. Now reduce the blender speed to minimum and add half of the olive oil and let it mix. Now add the lemon juice. Start adding the remaining olive oil very slowly and let your mixture get thick and form into a rich emulsion. Transfer it to some bowl and add salt and pepper. Cover the sauce and let it chill.
This is the basic aioli recipe and you can add your own variations in the form of different seasonings.
Creating your own recipe
Many people don’t like the overpowering taste of olive oil and you might be one of them. In order to create your own recipe for aioli sauce, all you need to do is to select the seasoning and oil you like. Add half amount of olive oil and half of the oil you like the best. This will balance the taste. Now gather the seasoning you like; it can be anything including crushed cumin, oregano, rosemary, hot sauce, or even horseradish.
Now add garlic and eggs to the blender in the same way as in the basic recipe and add your favorite oil. Blend it well then add lemon juice. Now start adding olive oil in the same way as described above. Blend until it forms into a rich emulsion. Once it is done, start adding your seasoning. Add it gradually and keep on tasting it. Experiment with different or all the seasoning ingredients you have. Make your sauce according to your own taste.
If you don’t want to start from scratch, you can use the mayonnaise as the base and add remaining ingredients to it. Pick the mayonnaise you like, and start adding the seasoning of your choice to it. Aioli recipe is simple and quick to make.
